Picnic Broccoli

Looking for a great dish to bring to a BBQ or to have on-hand to pack in a picnic lunch? Get RAW broccoli—looks and taste delicious—even to the kiddos!

What you need:
5 c. broccoli cut into bite size crowns
3/4 c. dried cranberries
1/2 c. chopped cashews
1/2 c. chopped pecans
1/4 c. pine nuts (super optional but a nice touch when you have them)

1/2-3/4 cup mayo (Amount depends on how you like it. Also, we have been using Chosen Foods Avocado Mayo, but have also used Smart Balance or Olive Oil kinds)
3 TB honey or agave nectar
3 TB apple cider vinegar
1 1/2 tsp crushed garlic
1 tsp Dijon mustard (optional)
1 tsp salt (unless your cashews and pecans are salted then your probably don’t need more salt)

What to do:
In a big bowl mix up dressing
Add salad ingredients and mix well
Eat and share. Yum.
