These are not your grandma’s mashed potatoes. These are a delicious way to get another vegetable into your meal and some great healthy fat!
Like most of my recipes, it’s very simple and difficult to mess up. If I can do, it you can do it J
What you need:
12-14 oz coconut milk (the full fat kind)
Head of cauliflower
1/2-3/4 c. cashews
What you do:
Cut the cauliflower into very small florets
Place in pot
Stir coconut milk well till creamy
Pour milk over cauliflower
Crush cashews and place on top
Bring to a boil
Simmer on low/med with lid on for 30 min
Mash cauliflower and let sit with lid on for another 5-8 min
Mash together and serve

YUM! I cannot wait to try these, I’ve made cauliflower “mashed potatoes” before, but they were just kind of bleh and watery, can’t wait to try this recipe!
