Cauliflower Coconut Mashed “Potatoes”

These are not your grandma’s mashed potatoes. These are a delicious way to get another vegetable into your meal and some great healthy fat!

Like most of my recipes, it’s very simple and difficult to mess up. If I can do, it you can do it J

What you need:
12-14 oz coconut milk (the full fat kind)
Head of cauliflower
1/2-3/4 c. cashews

What you do:
Cut the cauliflower into very small florets
Place in pot
Stir coconut milk well till creamy
Pour milk over cauliflower
Crush cashews and place on top
Bring to a boil
Simmer on low/med with lid on for 30 min
Mash cauliflower and let sit with lid on for another 5-8 min
Mash together and serve

Even the kids LOVE it

Did you notice my photographs on this post were drastically more amazing than other posts? The credit goes to amazing photographer Maggie Fortson, who not only captures food beautifully but also children, families, and weddings. Thank you, Maggie!

  1. YUM! I cannot wait to try these, I’ve made cauliflower “mashed potatoes” before, but they were just kind of bleh and watery, can’t wait to try this recipe!
